Do a drunk chicken by buying a can of beer or other liquid if you prefer and placing the chicken on top of the can in a sitting position. In other words, the can is inside the cavity of the chicken and the meat is balanced on top. Season the chicken and place it in the smoker. The liquid in the can steams the chicken and keeps it very moist. Check on it after it has cooked for about 60 – 90 minutes. It stays moist because of the evaporating liquid.

I suggest that you start out with some small projects first. If you start out with something large like a whole turkey, you may end up wasting a lot of time and money if it does not turn out well. Practice first until you see what tastes you are trying to achieve. A few small pieces of fish or smaller cuts of chicken or ham etc work really well.

I like to use nut shells sometimes instead of wood. Soak them the same way.

As a nurse who sees many, many injuries my suggestion would be to thoroughly follow any and all safety suggestions from the manufacturer. It’s easy to want to “cut corners” and most of the time, you’ll get away with it, but all it takes is one serious injury for you to realize that, it’s not worth the time you might have saved.
