Any Tips For Cooking Theory?

In a while, I’ll be moving and beginning a cooking apprenticeship. Are there any people out there who have been to cooking school or been a chef’s apprentice? I’m looking for recommendations for things I should read or study. What books on theory do you recommend? What can I do to prepare?

Best book is sometimes referred to as the Chef’s Bible, it is Larousse Gastronomique. There have been many editions over the years, but basically it is an encyclopedia for the chefs. It is based on french tradition, however, there have been other national editions. Really though, if there is any recipe you want to look up, refer to Larousse. If there is any dispute in the recipe, refer to Escoffiere, as he is known as the grandfather of the kitchen. He was the one who designed the kitchen brigade.This is purely French tradition of course.
Really though, if you want to become a chef, it should take you 4yrs. Sure you can do a few courses and a bit of time in a kitchen and after 18mths be a chef on paper. But really it will take you about 4yrs to truly know what it is like to work in a kitchen. The traditional Chef’s apprenticeship took 4yrs to aquire the skills needed, the first 2yrs were character building, next 2 were skills development and honing. After finishing your apprenticeship, the next few years should be spent developing your palate and experience.

buy from the paperback book club QPB their six books for a dollar why its about 30 buck with the shipping i bought several good cook books in therelike HOW TO COOK EVERYTHING and i use that also theres about twenty websites from the food channel to dio research but you should recieve a good text book from the school when you go and theres gonna be several types of cooking taught each week i did the US Army School at Fort Jackson south carolina and finished number 2 out of 157 people in my class and was the nuber two cook at fort bragg NC for 1979 and 1980 out of 2300 cooks and the guy who won each year wasnt a cook he was an officer in the office of the supply for the mess halls he was a paper chef i cooked meals for the troops everyday

call the culinary school and ask the counselor where they recommend u take an internship or what they look at/consider a qualificaction towards culinary school
