Its amazing what people give as cooking tips. For example I always cooked my steaks on a medium heat in the frying pan and they were always rubbery. I now cook them on high heat and they are the best, lovely and tender.

Stop your gammon from curling up as you cook it by taking a knife and putting 5 slices around the outside of the gammon. It will stay nice and flat cooking evenly

always rip lettuce never chop it,
keep peeled potatoes in water
keep peeled apples in water with lemon juice
these all prevent food from becoming dis coloured
mix honey and whole grain mustard together and brush on to sausages.. tastes great

You can tell by touching and compare with touching your face – trust me on this one!
Rare – touch your cheek
Medium – touch your chin
Well done – touch your forehead

When cooking with Butter, put a drop of oil in it to stop it burning…..

I have a good vegetable recipe for basically any vegetable:
You need a teaspoon or two of garlic, a little butter, and some seasonings.
Throw the butter on the pan in medium heat.Then put the garlic down. Then slap your veggies on and mix ‘em around. Add garlic or butter if you feel it needs it. Finally add your seasonings (I like Pual Prudhommes Veggie Magic & Lawry Salt) and let ‘em cook for a little longer. Then you’re done!

Sillly one really involving onions,
First if they make your eyes sting wash the insides of your wrists with cold water, my gran told me this and it works for some reason.
Secondly when cooking with onions, put half the onions in at the beginning and the other half close to the end of cooking, this way the first half give you a sweet onion flavour as they caramalise and the other half give you the more bitter flavour, two flavours from one ingredient, how good is that.

erm couple that i have tried
1) if you make a curry to hot when you put the sauce on your plate mix in mayonnaise and it will take the heat out of the curry.
2)if you dont like mayonnaise use vinegar – dunno why that works but it does
3) cook what you like and dont always follow a recipe add in the things you like and it wil ltaste so much better
4) never never never boil a courgette – fry em with black pepper so tasty

No NO no salt on steak during cooking or they’ll be too dry. only AFTERwards. Cooking is also chemistry.

if your curry is too hot and spicy then add some lemon juice…..
when cooking a steak only flip it once to get even cooking throughout…..
when poaching eggs add a little white vinegar to the water, helps to hold the egg together. you can also stir the water if you want before dropping in the egg.
keeping chopped lettuce in a little water in the fridge will stop it going brown so quickly…..
always eat what is in season. it will be at its cheapest and taste its best…..
when heating milk in a pan, adding a little water first and spreading it around the pan will stop the milk from burning onto the base of the pan.
when stewing meats in a pan, adding a metal spoon to the mix will speed up the process of the meat getting tender. just remember to remove it again.
adding cornflour to marinades will help to tenderise the meats being marinaded. so will kiwi fruit, papaya or paw paw, and also the pips from the papaya/paw paw that have been dried out in a low oven and then ground to a powder. also pineapple helps to tenderise.
never put kiwi or pineapple into a fruit jelly as it will not set properly due to the agents in them that help them tenderise stuff. the enzymes break down the jelly.
when cooking with butter, adding some oil will help you reach a higher cooking temperature from stopping the butter burning.
never use freeze dried coriander leaves-they are crap.
when juicing lemon/lime/orange- instead of cutting it in half, cut off one edge just off centre, then cut off the other edge, when you squeeze all three parts you will get more juice out- especially with limes.
buy a juicer if you want to juice loads
always let your meat rest for at least 5 minutes after cooking…..

To make whipped cream, the bowl and beaters and cream have to all be cold. And put a pinch of cream of tartar in for stabilization.
Don’t salt your beans while boiling them, they’ll get tough.

For lovely roast potatoes only par boil them for 3mins, put them in cold water & let them boil, take them out after 3mins give them a shake & put them in the oven covered in sizziling hot oil or fat.
For yorkshire puds use a small cup & measure the same amount of eggs milk & flour into a bowl, give it a good whisk then heat the oven with a drop of oil in the dish until it is red hot, take the dish out & put it on top of a lit hob & pour the mixture in and it will start to cook immediately then pop it in the oven for 15min – blooming lovely !!!!!!

if you have unwanted oil floating on top of sauces, stews etc drop a couple of ice cubes in and the oil will stick to it then fish them out! add a pinch of nutmeg to creamy cheesy sauce as it really bring out the flavour and gives it a lovely taste! if using lemons or limes in cooking, before you juice them either put it in the microwave for a few seconds or roll it on the work service with your palm to get more juice out of it!

Whatever amount of rice you’re cooking, pour cold water in to 2cm above the level of rice. Bring to the boil, stir once, and simmer until all the water is absorbed. (Certain types of rice may need to stand, with the lid still on, for a few minutes to finish).

When you make cheese sauce, don`t cook the cheese. Once the basic sauce is ready, turn off the hot-plate, then add the grated cheese and gently stir around,do not continue to cook. Cooking cheese makes it go rubbery.

Don’t mistake Whiskers meaty chunks in jelly for a tin of curry, unless you’ve got Worcestershire sauce, Tomato ketchup and chili to improve the flavour!

when you make a lasange be creative use things such as mixed herbs chilli powder bbq sauce yes it works!! mixed with the mince maybe some garlic powder to spice it up ?

I always found that my bolognese sauce tasted slightly too thin and not quite right until I started adding a teaspoon or so of sugar. The sugar gives a depth and a richness that makes your spaghetti bolognese or lasagne taste superb.

Stop Flipping!!! Try your best not to flip a steak more than four times, two at best, slow heat, the more flip the drier your steak will be. Put on grill one side 20 to 40 mins next side 30 mins, it should be ready.
