Keep the potatoes submerged in cool water or even ice water till the last minute you are ready to use them. You can slice them, soak them and dry off extra moisture with paper towels before using them.

Give us more details as to how you are doing it. I’ve never had that happen before.
Make sure if you peel and cut the potatoes ahead of time that you keep them in cold water. But it does still take a long time before they turn black.

Lemon juice, or put foil wrap right on the potato making contact so it can’t touch any air.

keep them in cold salt water to just before you use them or boil them in salt water if you are boiling them
