We have decided to cook rabbit for easter dinner (easter bunny – a little bit quirky but cool, I think). What is your favorite recipe for cooking Rabbit?

Marinade whole with lemon, garlic, onion, rosemary. Discard marinade, rub with olive oil, salt&pepper. Set uncovered in the oven at 400 for 20 mins, than cover until cooked, sprinkle on a bit of ground corriander and brown it a bit.

Cool, I serve Reindeer sausage from Alaska for Xmas breakfast.
Salt, pepper, galic powder
Brown the rabbit pieces
Place rabbit in a Dutch oven or equivalent pan. Pour this mix over the top: Onions chopped, garlic chopped and 2 cans of Mushroom soup and 2 soup cans of water. Bake 350F for 1 hour or until done.
Serve with mashed potatoes, coleslaw with pinneapple in the recipe.

Crock Pot Rabbit
This dish is at its best served over rice with a fresh green salad.
2 rabbits, cut into serving pieces
1 cup celery, sliced
1 cup carrots, peeled and sliced
1 onion, chopped
1 can water chestnuts, sliced
2 cups fresh mushrooms, sliced
3 cups chicken broth
Salt and pepper
2 Tbsp cornstarch
½ cup sherry
Place all ingredients except cornstarch and sherry in crock pot and cook on low for 6 hours. Remove rabbit from pot. In a separate bowl, combine sherry and corn starch. Pour into crock pot to thicken the sauce. Return rabbit to the crock pot and mix. Servings: 6-8

My friends mom always made me baked fried rabbit every time I went to visit since she knew it was my favorite. She made it in a iron skillet but that is all I can recall. I have moved 12 times since than or more so lost contact.

Fry it like chicken. It’s so tasty.
