If they’re not sealed up, I give them a quick rinse before using them and they’re good to go. You could toss them into any stir fry, but I think they’re much better raw. You could mix them into a salad, which is boring but easy, or my favorite way – Vietnamese summer rolls.

I use sliced tofu instead of shrimp, of course, and also add some chopped cashews in there. If you have difficulty finding the rice wrappers or rice noodles, try to find an Asian supermarket in your area.

Put it in a roasting pan with a little salt and pepper. Top the pan with aluminum foil and cook it on low heat (300-350) until the juices run clear.
If you’re planning on having it for dinner tonight, I would get it started ASAP; the closer it gets to dinner the more you’re going to want it finished, but rushing it will make it chewy. Cooking it low and slow will make it buttery and yummy.
You can also throw in some cut up potatoes and carrots a couple of hours from dinner time; they’ll roast in the juices and be delish.
Enjoy!
