Many of your favorite recipes can be successfully adapted to the crockpot or slow cooker if you follow a few simple rules. You’ll find a basic time/temperature guide for converting recipes, some do’s and don’ts for specific ingredients and a few tips for making your slow cooker dishes more flavorful. Liquids Generally, liquids may be decreased in slow cooking – a general rule of thumb is about half the recommended amount. Unless the dish contains rice or pasta, one cup of liquid is usually enough. Pasta and Rice When recipes call for cooked pasta to be added, cook it until just slightly tender before adding to the pot. Add 1/4 extra liquid per 1/4 cup uncooked rice, and use long grain converted rice for the best results. For long-cooking recipes, add cooked rice shortly before serving. Beans It is usually best to soak beans overnight before cooking them in the crockpot. Before adding sugar or acidic ingredients, the beans should be softened first, either in the slow cooker or on the stove top. If your recipe includes tomatoes, salt, or other acidic ingredients, the beans should be tender before beginning. Herbs and Spices Ground herbs and spices tend to dissipate over long cooking times, so it’s best to add them near the end of cooking. Whole herbs release flavors over time, so are a good choice for crockpot cooking. You should taste and adjust seasonings, if necessary, before serving. The Art Of Slow Cooking

I come from a long line of cooks and our kitchens have always been a place for us to express our creativity. Both women and men cooked in my family and frequently teased each other as to who was the best cook (without a doubt, it was my mother).   My brother had a cooking show on one of the local networks years ago and the family Bar-B-Que recipe is still one of our favorites.   However, I am the only one who has that ‘secret recipe’ as my mother entrusted it to me.   My father, grandfathers, my mother and my grandmother each had a different Bar-B-Que recipe, but it was my mother’s that was the favorite at all family picnics and church gatherings.   I inherited my family’s love of culinary adventure, but not quite as much of the talent! So, you know anytime a new gadget or something comes on the market that will send me to the kitchen, my husband knows I am going to get it.   I do have a few favorite gadgets, though – like my slow cooker, which is great to have dinner ready if we are going to be gone for the day, and food processor. These things I just cannot do without when it comes to easy, fast preparation and great meals. The first slow cooker, and originally known as the crock-pot, has been around since the early 1970’s. By 1991, the slow cooker had generated over $30 billion in sales. Believe it or not, I still have the original one my mother bought back then. It has participated in many Sunday roast dinners with all the trimmings.   Slow cooking rendered the toughest cuts of meat to falling-off-the-bone-tender and added the flavor of the vegetables to the juices in the pot. The slow cookers weren’t very attractive back then, and have evolved over the years.   My mother’s famous chicken and dumplings were cooked in that old slow cooker and that is the dish she took to every church dinner at the request of everyone! We have since upgraded to a larger slow cooker with lid locks and handles. My husband’s favorite slow cooked dinner is roast with potatoes, carrots and gravy.   Mine is a chicken dish. In the morning, I put two skinless chicken breasts in the slow cooker, add a cup of rice, water for cooking (water amount depends on what type of rice you use – white, brown or basmati – our favorite), and add a jar of Seeds of Change Tikka Masala curry sauce on top, cook all day and it is ready by the time we get home from work.   The chicken and the rice absorb all the flavors and it is yummy!  Serve with a tossed salad and you have a complete healthy and delicious meal! I couldn’t begin to tell you how my mother made her chicken and dumplings.   We could never duplicate that recipe. She just had that special loving touch and evidently, a secret to her incredible dumplings.   The great thing about a slow cooker is that you can cook just about anything from meat dishes, to pasta dishes, dessert and bread. It also saves on the electric bill and in the summer keeps the kitchen from heating up since you don’t have to turn on the oven for a few hours to cook. And believe me, living in a hot, humid climate like we do, that is worth it in itself!

When Cooking With A Slow Cooker, Does High/low Settings Make A Difference?

This is my first attempt using new Rival Slow cooker versi-crock pot…..
I put an onion in the bottom …then added butterfly pork chops with salt and pepper…then added 32 oz sauerkraut w/juice on top of that with about 1/4 cup of brown sugar…….I have it on low setting and plan on cooking about 8 hours…
Do you think this will be good..its starting to smell good right now….any other things you would add?

How To Save Time With Your Slow Cooker

The great thing about using a slow cooker is that you can prepare your meal in about 15 minutes and not have to worry about it anymore. When I rise in the morning, it seems that this is the time of day when I feel the most energized. This makes it an ideal time to add all of the ingredients into my slow cooker and head off to work. Who wants to work all day and then come home and spend an hour or two preparing dinner? Not me! Though slow cookers will save you a lot of time, there are a few tips I can give you that can help you use your slow cooker more effectively. The first thing that you can do to save time is prepare your foods the night before and refrigerate them. This will save you time in the morning because you only need to place your ingredients in the slow cooker and you are done! Some foods such as rice and pasta you will not be able to prepare ahead of time but most foods can be. Just do as much as you can. After all, you have enough to do in the morning with getting ready for work, breakfast, the kids and so on. Being that the majority of popular slow cookers only have two settings of low and high, I have found that cooking on the lowest setting gives me the best results. A common problem with slow cookers is that they cook too hot and if you use the high setting, you have a good chance of overcooking your meal. I have never overcooked any food by using the low setting. Programmable crock pots are also an excellent idea because they make it literally impossible to cook something incorrectly because you can set and forget. Many slow cooker recipes call for vegetables and if you are going to use fresh ones, you will want to plave these under the meat as they will take longer too cook. Canned vegetables cook fast and should be placed over the meat. Also, it is a good idea to thaw out the meat before placing it in the crock pot. Some people will put a frozen roast in a slow cooker but I have found that my roasts have cooked better when they are thawed out first. I hope that these small suggestions will help you utilize your slow cooker better and save you time. You will find that as you use your slow cooker more and gain experience, you will develop your own habits and find other ways to save time.
